Ingredients

  • 500 g cavatelli pasta
  • 2–3 cups broccoli florets (fresh or frozen)
  • 3 cloves garlic, minced
  • 4 tablespoons olive oil
  • ½ teaspoon red pepper flakes (optional)
  • Salt, to taste
  • 2–3 tablespoons grated Parmesan cheese

Optional Additions

1 tablespoon butter (for richer flavor) , Cooked sausage or chicken (for protein variation)

Equipment

  • Large pot
  • Colander
  • Large skillet or pan
  • Wooden spoon

Method

  1. Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Add cavatelli pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Step 2: Cook the Broccoli

Add broccoli florets to the pasta water during the last 3 minutes of cooking, or cook separately by steaming until tender but still slightly firm.
  3. Step 3: Sauté Garlic

In a large pan, heat olive oil over medium heat. Add minced garlic and cook for about 30 seconds until fragrant. Do not burn.
  4. Step 4: Combine Everything

Add broccoli to the pan, then add drained pasta. Toss well and add a small amount of reserved pasta water to create a light sauce.
  5. Step 5: Season and Serve

Add salt, red pepper flakes (optional), and grated Parmesan cheese. Mix well and serve immediately.

Notes

  • Use fresh broccoli for best flavor and texture
  • Do not overcook pasta (keep it al dente)
  • Pasta water is essential for a silky sauce
  • Adjust garlic and spice level to taste
