Ingredients

  • 4 large eggs, separated
  • ½ cup (100 g) granulated sugar
  • cups (360 g) plain yogurt
  • 6 tbsp cornstarch
  • 1 tbsp baking powder
  • 1 Pinch of salt
  • Powdered sugar (for dusting)

Equipment

  • 2 Mixing bowls
  • 1 Electric hand mixer or stand mixer
  • 1 Spatula
  • 1 Whisk
  • 1 20 cm (8-inch) round cake pan
  • 1 Parchment paper

Method

  1. Step 1: Prepare the Oven and Pan

Preheat your oven to 170°C (340°F). Line the bottom of a round cake pan with parchment paper.
  2. Step 2: Separate the Eggs

Carefully separate egg whites and yolks into two clean bowls.
  3. Step 3: Mix the Yolk Batter

Whisk the egg yolks with sugar until pale and creamy. Add yogurt, cornstarch, and baking powder. Mix until smooth.
  4. Step 4: Whip the Egg Whites

Add a pinch of salt to the egg whites and beat until stiff peaks form. The mixture should be glossy and hold its shape.
  5. Step 5: Fold the Mixture

Gently fold one-third of the whipped egg whites into the yolk mixture. Then fold in the remaining whites carefully using upward motions.
  6. Step 6: Bake

Pour the batter into the prepared pan and smooth the top lightly. Bake for 45–55 minutes until lightly golden and set in the center.
  7. Step 7: Cool and Serve

Let the cake cool gradually before removing from the pan. Dust with powdered sugar before serving.

Notes

  • Use room temperature eggs for better volume.
  • Do not overmix — this keeps the texture light.
  • Avoid opening the oven early to prevent collapse.
  • Let the cake cool slowly for best structure.
